Pumpkin Bars

Even with all this pumpkin baking, I still have about 3 cups left in my refrigerator. What is a girl to do with all this pumpkin?

This is my favorite pumpkin recipe that I’ve found so far, and it’s even semi healthy! They are super moist with just the right amount of spice. They always come out perfectly from the oven and I’ve never had a problem baking them.

Pumpkin Bars
– 1 cup flour
– 2/3 cups granulated sugar
– 1 teaspoon baking powder
– 1 teaspoon ground cinnamon
– 1/2 teaspoon baking soda
– 1/8 teaspoon salt
– 1/8 teaspoon ground cloves
– 1 cup canned pumpkin
– 2 slightly beaten egg whites
– 1/4 cup cooking oil
– 1/4 cup water

Directions
Spray a medium-size baking pan with nonstick coating; set aside.
Combine flour, granulated sugar, baking powder, cinnamon, baking soda, salt, and cloves in a medium bowl. Stir in pumpkin, egg whites, oil, and water until thoroughly combined. Spread batter into prepared pan.
Bake in a 350 degree oven for 20 to 25 minutes or until a wooden toothpick inserted near the center comes out clean. Cool in pan on a wire rack.
Cut into bars

    i made these but changed the recipe a little by using pumpkin spice and then a streusel topping with chopped pecans, cinnamon, brown sugar and butter. but i also didnt want the pumpkin to be overpowering, i just had some lying around and didnt want it to go to waste and my sister isnt a big fan, but even she liked these! ive been following your blog and have loved all the recipes ive tried. i normally always try to add my own personal twist to it =)

    I just made these, and they are yummy, but your picture looks more cake-like than the way mine turned out. 🙁 Are they supposed to be almost creamy?? Idk what I may have done wrong.

    Ok, I’m going to walk away from the computer now. I’ve just spent about 45 minutes on your blog, and it’s been wonderful! I was looking for new things to bake to head into the Holiday weekend, and I found plenty here (I’ve printed about 10 sheets off…haha).
    These bars look AWESOME, and I can’t wait to try them (I have your cinnamon swirl banana bread in the oven right now, and it smells great).

    Just made these, and they turned out fabulous! Perfectly moist and delicious. I was happy to find this recipe since it’s a little bit healthier than most of the ones I found.
