How is time going by so quickly lately? I feel like I just updated my blog and when I check, it’s already been a week! Holy moly. Someone’s pressing the fast forward button.
We all know how I’m a fan of cooking in the oven rather than the stovetop. This chicken came out juicy with a crunchy crust. It was very aromatic and went great with mashed potatoes.
Sorry for the terrible pictures. I actually cooked for dinner rather than for my blog, so the sun was long gone by the time I finished making this meal. We can’t always be good bloggers.
Recipe from Cinnamon Spice and Everything Nice
Oven Fried Parmesan Crusted Chicken
Ingredients
- 1/2 cup mayonnaise
- 1/4 cup grated Parmesan cheese
- 4 splashes of Tabasco
- freshly grated pepper
- 4 boneless, skinless chicken breast halves (about 1-1/4 lbs.)
- 4 tsp. Italian seasoned dry bread crumbs
Directions
- Preheat oven to 425 degrees.
- In a bowl, mix together the mayonnaise, parmesan cheese, tabasco, and pepper.
- Place the chicken on the baking sheet. Evenly spread the mayonnaise spread on top of each chicken breast.
- Sprinkle the bread crumbs on top.
- Bake for 30-35 minutes.
