Crockpot Pulled Chicken Dip

Annnddddd we’re officially in April. We have been for a while, but I’ve just been a bit busy to post! My DB’s sister, brother in law, and their kids came up for their spring break to visit us in the Bay. It’s so nice when family comes up to visit– I loved having them up here!

Finding kid-friendly restaurants in Berkeley is a lot harder than it seems. There’s not that many places that have kid menus or something simple for them to eat since everything is pretty ethnic.

Here’s a fast recipe for a fast update. Three whopping ingredients, which I’m sure you already have on hand, for a quick and filling snack or dinner. Serve it as is for a snack, and throw it inside of a tortilla with some extras to make a burrito. Sorry this post is super short, I’ve got errands to do and work later in the day. I promise to be back soon with a more interesting update!

Crockpot Pulled Chicken Dip

Ingredients

  • 2 chicken breasts
  • 1 cup salsa
  • 1 can of cream of mushroom soup

Directions

  1. Place the chicken into the crockpot and poor the salsa and soup on top.
  2. Cook on low for 4-6 hours.
  3. Serve with chips or inside a tortilla.

Lucky Charms Rice Crispy Treats

While I was sitting at my computer uploading these pictures, a spider crawled across the blinds on my window. As always, I immediately called my DB from the other room to come over and handle the situation. Let me just say that I’m not terrified of spiders, I just prefer not to do it when there’s a “man” around. I’ll explain the quotation marks later.

He rushes over with a tissue in hand, ready to take on the eight legged creature. The spider’s in an awkward spot since you can’t really push against the blinds.

I inform him that the only way to kill the spider was to pinch it, with the blind between your thumb and second finger. Did he listen? Nope. He makes a measly attempt, barely touching the spider with the tissue, causing the spider to fall somewhere behind my desk. Great. Now I have to go to bed with the thought of a spider crawling around right next to me.

As I ever so lovingly exclaimed to my DB that he ruined my night, he found the spider in a crevice at the base of my desk. I told him to make sure he got it instead of pissing the little thing off even more. He put the tissue aside and used a box. He only had to use it three times before the spider was finally out of our worries.

I realized that my DB’s kind of sissy, hence the “man” in quotation marks. He may come off very manly (hellooo macho Italian man, much?), but deep down, I’m pretty sure he’s more terrified of spiders than I am. The last time I asked him to kill a spider, he full on chucked a shoe at the floor as hard as he could. Needless to say, that little guy got away.

I do commend him for “coming to my rescue,” though. He’ll cover up his minuscule fears to make sure our apartment is sleep friendly. What a sweetheart. You’re probably thinking my DB would kill me for saying this about him, but he never reads my blog so I’ll take my chances.

My kitchen’s feeling a little festive for Easter tomorrow. How can you not with all the pastel colors in Target? I got those little chickadees from the dollar section, one of my favorite spots to kill thirty minutes.

I am a cereal hoarder, and we always have at least ten boxes of cereals for my two person apartment. Is that ridiculous? I tend to favor Lucky Charms and my DB loves his Reese’s Puffs. Instead of making ordinary rice crispy treats, I decided to use some of the cereal that I had on hand instead. De-li-cious. I also had Easter themed sprinkles that I sprinkled on top.

Lucky Charms Rice Crispy Treats

Ingredients

  • 10 oz bag of marshmallows
  • 4 tablespoons butter
  • 4 cups Lucky Charms
  • 2 cups Rice Crispies
  • Sprinkles for decorating (optional)

Directions

  1. Line a 9x13 baking pan with wax or parchment paper. Set aside.
  2. In a large saucepan over low-medium heat, melt together the butter and marshmallows until smooth while stirring constantly.
  3. Remove the pan from heat and gently fold in both cereals.
  4. Pour the mixture into your prepared baking pan and press down using a piece of wax paper so it doesn't stick.
  5. Add sprinkles (if using) on top and gently press again into the mixture.
  6. Let cool for an hour before cutting.

Marshmallow Caramel Popcorn

The common cold has invaded our house and has knocked my DB and me off of our feet. He’s currently on day seven of being sick and I’m on day five. I always tell him when he gets sick that he can’t infect me because I’m immune. You’d think after working with kids for so long, you have a higher tolerance for bacteria. Turns out, I never get sick from the kiddos, only from my DB. Thanks, dear.

Day one was the worst. My lymph nodes were out of control for the next couple of days trying to fight it off. Now, we feel the worst in the morning and before bed. I pretty much cough the entire night with my deep, raspy, manly cough. I feel bad for my DB; I have no idea how he sleeps through it when I wake myself up from coughing so much. But then again, he’s the one that got me sick sooooo tough luck.

As for cooking while being sick, it’s the worst. I still do it, but I’d much rather skip it. I’m content with eating popcorn and a cup of soup for dinner, but my DB never loses his appetite, despite how sick he is. That means that popcorn and soup aren’t too appealing for him. Sick days for us = eating out quite a bit.

I’ll still eat popcorn whenever I get the chance to. I buy kernels and cook them in the microwave with this Popcorn Popper from NoricWare. It’s one of the greatest inventions ever. It’s a simple concept, but works wonderfully. I can cook the amount that I want to eat and don’t have to worry about popping kernels over the stovetop. The bowl itself is also the perfect size for mixing batter, serving popcorn, and storing cut fruits/vegetables cool in the refrigerator.

I bought mine from Target, but you can find it online if you don’t have a Target near you.

This is my first time making a sweet popcorn. I normally just add butter and salt to mine. You won’t believe how easy and quick it is to make some marshmallow caramel! It’s almost embarrassing.

I will note that the popcorn does lose it’s crunch rather quickly. I’m not sure how to fix that problem– any popcorn pros know?

Marshmallow Caramel Popcorn

Ingredients

  • 1/4 cup brown sugar
  • 1/4 cup butter
  • 3 1/2 tablespoons unpopped popcorn kernels
  • 1/4 cup Jet-Puffed Mallow Bits vanilla flavor
  • 1 cup miniature marshmallows

Directions

  1. Cook the popcorn kernels using your preferred method and set aside. Make sure to remove any un-popped kernels.
  2. In a pan over low heat, melt together the brown sugar, butter, and miniature marshmallows (not the mallow bits!) until completely melted and mixed.
  3. Immediately pour the batter over your popped popcorn and stir until evenly coated.
  4. Mix in the mallow bits.
  5. Serve immediately!
