Day 3: Mama’s Peanut Butter Cookie

Day 3: Mama’s Peanut Butter Cookie. In all seriousness, I think that peanut butter cookies are the easiest cookies to make. There aren’t that many ingredients and it usually turns out perfect, no matter what the recipe. That’s why I don’t necessarily have a “go-to” peanut butter cookie recipe yet. They’re all good!

These are no exception to that assumption. They’re sweet with a hint of salty, packed full of peanut butter flavor, thick, and practically melt in your mouth. If that doesn’t describe a good peanut butter cookie, then I don’t know what does.

I like the addition of rolling the dough into sugar prior to baking. Peanut butter cookies are better to me when they’re just a tad bit on the sweeter side.

Mama’s Peanut Butter Cookie

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup white sugar
  • 1/2 cup (packed) brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 2 tbsp milk
  • 1/2 cup peanut butter
  • 1 3/4 cup flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • extra sugar, for rolling

Directions

  1. Preheat oven to 350 degrees.
  2. Cream together the shortening and sugars. Add the egg, vanilla, and milk.
  3. Mix in the peanut butter.
  4. Slowly stir in the flour, salt, and baking soda until just combined.
  5. Make rounded teaspoons (or tablespoons, depending on how big of cookies you want) of dough and roll the balls in additional sugar.
  6. Place on cookie sheet and gently press with a fork twice, making a criss cross pattern. Bake for 10-12 minutes.

Day 2: Nutella Kiss Cookies. You might as well call these “be my boyfriend/girlfriend now, cookies” because that’s exactly what they’ll do. Everyone will love you for these babies!

I still had my jumbo sized double pack Nutella from Costco waiting to be devoured and since I pretty much just use it for baking, I wanted to include something in my 12 days of cookies with Nutella. There are many versions of these “Kiss” cookies, but I think this one takes the cake.

Even without the Hershey’s Kiss, these cookies are marvelous on their own. I actually prefer them that way because I can eat unlimited cookies but only so many Kisses. I realized while watching people eat these (that doesn’t sound creepy at all) that after the first two cookies consumed, people tend to take off the Kiss to eat the next cookie.

Granted, there area always chocolate lovers that will gladly eat the removed Kiss from anyone else’s cookie. To each their own.

Nutella Kiss Cookies

Ingredients

  • 1/2 cup shortening
  • 1/2 cup Nutella
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/8 tsp baking soda
  • 1 egg
  • 2 tbsp milk
  • 1 tsp vanilla
  • 1 3/4 cup all purpose flour
  • 1/4 cup granulated sugar for rolling
  • 36 Hershey Kisses, unwrapped

Directions

  1. In a large mixing bowl, beat shortening and nutella. Add the 1/2 c granulated sugar, brown sugar, baking powder, and baking soda. Beat until combined.
  2. Beat in egg, milk, and vanilla.
  3. Beat in the flour.
  4. Scoop out rounded tablespoons and roll them into balls. Roll the balls in the granulated sugar and place on a cookie sheet, 2 inches apart on a parchment lined, ungreased cookie sheet.
  5. Bake at 350º until edges are set.
  6. Press kisses into the center of each cookie as soon as they are removed from the oven. Let cook on wire rack. Makes approx. 3 doz cookies.

Double Chocolate Cake Mix Cookies

It’s officially time for holiday baking! I la-la-love all of the extra holiday items that pop up on the shelves at the end of the year. There are so may desserts just begging to be made. I’ve always been a fan of the Pillsbury® products and they certainly don’t disappoint in the holiday department.

Just look at their adorable sprinkles from the Funfetti Vanilla Frosting. The red and green are vibrant, wonderfully shaped, and hold up well in a 350 degree oven. I love the contrast that the bright colors bring against the Devil’s Food Cake Mix. Wouldn’t they look great on a plate for Santa?

You can doctor up this cake mix into cookies and no one will ever know that they’re not 100% homemade! It’ll be our little secret. After all, we need all the time we can get during the holiday season.

These cookies are full of chocolate flavor. I’d recommend using an oil that you like the taste of. I used extra virgin olive oil and the taste came through pretty easily. Perhaps a vegetable oil would be more tame? Or a coconut oil if you’re a fan of coconut flavor?

I just rolled the tops in the sprinkles since decorating the bottom of a cookie seemed pointless to me. Who looks at the bottom of a cookie? I’m too busy gobbling it down. Here are some of the other Pillsbury products that you can find this holiday season:

Double Chocolate Cake Mix Cookies

Ingredients

  • ½ cup butter
  • 1 egg
  • 1 packet instant coffee dissolved in 2 tablespoons water
  • 1 tablespoons oil
  • ½ teaspoon vanilla
  • 1 box Pillsbury Devil's Food cake mix
  • 1 cup chocolate chips
  • 1 cup white chocolate chips
  • sprinkles (optional)

Directions

  1. Preheat the oven to 350 degrees.
  2. Beat the butter until smooth. Add the egg and beat again until incorporated. Add the coffee, oil, and vanilla and beat until combined.
  3. Add the cake mix in batches and beat slowly after each addition until just combined.
  4. Stir in the chocolate chips and white chocolate chips. Roll into balls and roll the top into the sprinkles, if using.
  5. Place on a baking sheet and bake for 7-10 minutes,
