Boxed cake mixes are my best friend. You can make so much from them! These cookies have that wonderful cake mix flavor that we just love so much.

Use whatever kind of sprinkles you have on hand. Let your kiddos choose which one they want, it’ll be a fun family project!

Cake Batter Oreo Cookies

Ingredients

  • 1 cup all-purpose flour
  • 1 and 1/2 cups yellow or vanilla boxed cake mix (I used the Pillsbury Bold packs since they're just the right amount)
  • 1/2 teaspoon baking soda
  • 3/4 cup unsalted butter, softened to room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 egg, at room temperature
  • 1 and 1/2 teaspoons vanilla extract
  • 2/3 cup semi-sweet chocolate chips
  • 1/2 cup sprinkles (I used half confetti, half nonpareils)
  • 10 Oreos, crushed into pieces (any flavor you like)

Directions

  1. Preheat oven to 350 degrees F.
  2. Cream the softened butter and both sugars. Add the egg and vanilla. Mix on high until combined, about 1 minute.
  3. Gradually mix in the flour, cake mix, and baking soda until just combined.
  4. Add the chocolate chips, sprinkles, and crushed Oreos. Mix on low until the add-ins are evenly disbursed.
  5. Line two large cookie sheets with parchment paper or silicone baking mats.
  6. Scoop rounded balls of the dough onto an ungreased baking sheet.
  7. Bake the cookies for 10-12 minutes.

Flourless Peanut Butter Oatmeal Cookies

I can’t stop trying new cookie recipes. Some are a failure, some are a success, some are mehhh. I think this one falls in the category for mehhh category for me. They’re just too hard for my taste. But hey, if hard cookies are your thing then you’ll love them!

IMG_7868

I do like how simple they are, though. I like the minimal ingredients and lack of flour. Flourless cookies always intrigue me.

We finally got our refrigerator delivered yesterday and I can happily say I’m back in the kitchen (wait.. did I mention that we bought our first home and moved? I’ll do a kitchen tour soon!)! We’re slowly getting settled into our new place, so that’s why I’ve been MIA recently. More recipes coming right at ya! This one’s from Sally’s Baking Addiction.

Iced Oatmeal Cookies

May 16, 2016 by kim Leave a Comment

Guys. Today was a success. I was able to change the bed sheets, do three loads of laundry, sort out Ellie’s clothes that she doesn’t fit anymore and put them away, vacuum upstairs and downstairs, do the dishes, restock the diapers and wipes, AND make dinner from scratch (including freshly baked cookies for dessert!). I haven’t had this productive of a day in quite a while and gosh darn it, it feels good.

IMG_3055

It’s cause Ellie slept 13 hours last night and didn’t wake up until 11:30AM. She woke up twice to feed, but she passed out immediately after eating. She’s also taking longer naps today. Growth spurt? Who knows. Don’t get me wrong… I love my time with her awake, but when I can get everything on my t0-do list done, I’m THRILLED!

IMG_3060

These iced oatmeal cookies are going into my favorites. They’re just the right amount of sweet and have a nice hearty flavor. They’re also soft and chewy… my kind of cookie!

The extra icing on the top also make them pretty, don’t you think? Recipe from Mother Thyme.

  5. Bake for 10-12 minutes. Allow to cool completely before icing.
  6. For the glaze, mix together the milk and powdered sugar. Quickly dip the tops of each cooled cookie in the glaze and then let the excess drip off. Place on cooling rack until the glaze has set.
