Day 1: Turtle Chip Cookies

Did you think for a moment that I forgot about my usual 12 days of cookies? Because I did. How can it be December already? I feel like we barely finished last year’s 12 days of cookies!

This one’s a great one to start with… caramel, pecans, and chocolate all wrapped up in one buttery dough. This is one rich cookie.

Usually, turtle chip cookies and ice cream tend to have a chocolate base. Since I prefer vanilla over chocolate, these cookies won me over. The chocolate chips was enough chocolate for this gal.

These cookies have the perfect crinkle on top and turn a gorgeous shade of golden brown.

Turtle Chip Cookies

Ingredients

  • 3/4 cup (1 1/2 sticks) butter softened
  • 1¼ cups brown sugar
  • ¼ cup white sugar
  • 1 egg
  • 1 egg yolk
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2¼ cups all purpose flour
  • ¾ cup chocolate chips
  • ½ cup caramel bits
  • ½ cup pecan pieces

Directions

  1. Preheat oven to 375˚
  2. Beat together butter with sugars until fluffy. Add vanilla, egg and egg yolk.
  3. Gradually mix in the baking powder, baking soda, salt, and flour.
  4. Add flour and mix until dough comes together and everything is well incorporated. Stir in chocolate chips, caramel bits, and pecan pieces.
  5. Scoop cookie dough onto baking sheets and bake for about 12 minutes or until edges are lightly brown. Let cool for about 5 minutes on tray and then move to cooling rack.

Double Chocolate Cake Mix Cookies

It’s officially time for holiday baking! I la-la-love all of the extra holiday items that pop up on the shelves at the end of the year. There are so may desserts just begging to be made. I’ve always been a fan of the Pillsbury® products and they certainly don’t disappoint in the holiday department.

Just look at their adorable sprinkles from the Funfetti Vanilla Frosting. The red and green are vibrant, wonderfully shaped, and hold up well in a 350 degree oven. I love the contrast that the bright colors bring against the Devil’s Food Cake Mix. Wouldn’t they look great on a plate for Santa?

You can doctor up this cake mix into cookies and no one will ever know that they’re not 100% homemade! It’ll be our little secret. After all, we need all the time we can get during the holiday season.

These cookies are full of chocolate flavor. I’d recommend using an oil that you like the taste of. I used extra virgin olive oil and the taste came through pretty easily. Perhaps a vegetable oil would be more tame? Or a coconut oil if you’re a fan of coconut flavor?

I just rolled the tops in the sprinkles since decorating the bottom of a cookie seemed pointless to me. Who looks at the bottom of a cookie? I’m too busy gobbling it down. Here are some of the other Pillsbury products that you can find this holiday season:

Double Chocolate Cake Mix Cookies

Ingredients

  • ½ cup butter
  • 1 egg
  • 1 packet instant coffee dissolved in 2 tablespoons water
  • 1 tablespoons oil
  • ½ teaspoon vanilla
  • 1 box Pillsbury Devil's Food cake mix
  • 1 cup chocolate chips
  • 1 cup white chocolate chips
  • sprinkles (optional)

Directions

  1. Preheat the oven to 350 degrees.
  2. Beat the butter until smooth. Add the egg and beat again until incorporated. Add the coffee, oil, and vanilla and beat until combined.
  3. Add the cake mix in batches and beat slowly after each addition until just combined.
  4. Stir in the chocolate chips and white chocolate chips. Roll into balls and roll the top into the sprinkles, if using.
  5. Place on a baking sheet and bake for 7-10 minutes,

Pumpkin Chocolate Chip Oatmeal Cookies

Sorry guys, I think I’ve skipped Thanksgiving in my home and went straight to Christmas because it looks like a glitter bomb went off in my living room. The Christmas tree is up, the stockings are hung, the fireplace is decorated, and there in tinsel EVERYWHERE. I put everything up when I was home sick and it instantly made me feel better.

This is the first year that we (my DH and I) actually have a Christmas tree. We were constantly moving from apartment to apartment and never had the storage space for a tree before. We also knew we were eventually coming back to LA from the bay area, so that was one less item that we worried about taking with us. The tree is a skinny one because of our small space, but it just about touches the ceiling. I plug it in every night and stare at how beautiful it truly is. I started collecting ornaments on all of our trips, so it’s a reminder of all of the places we’ve traveled… Our little traveling tree.

I figured I’d make up for jumping holidays quickly by posting some more pumpkin recipes before we hit Thanksgiving (which, by the way, is only 4 days away!). I still don’t know what cookies I’m baking for Thanksgiving yet. Do you already have your menu together? I’d love to hear what everyone’s making!

As you can see from the pictures, these cookies didn’t flatten AT ALL. I didn’t press down on them prior to baking, but make sure to do so if you don’t wan’t cookie balls! I didn’t mind, they still tasted great.

These cookies had a mild/medium pumpkin taste. I thought that the oats went wonderfully with the pumpkin. It’s almost as if it absorbed all of the moisture from the pumpkin puree and locked it in to keep them soft. Recipe from Baking Bites.

Pumpkin Chocolate Chip Oatmeal Cookies

Yield: 2 dozen

Ingredients

  • 1 cup all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp pumpkin pie spice
  • 1/4 cup butter, room temperature
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1/4 cup pumpkin puree
  • 1 tsp vanilla extract
  • 2 cups quick cooking oatmeal
  • 1 cup chocolate chips

Directions

  1. Preheat oven to 350F.
  2. Cream together the butter and both sugars. Add in the egg, pumpkin, and vanilla.
  3. Gradually stir in the flour, baking powder, baking soda, salt and pumpkin pie spice until just combined.
  4. Working by hand, stir in the oatmeal and chocolate chips.
  5. Drop by rounded tablespoonfuls of the dough onto the baking sheet.
  6. Bake for about 11-13 min.
