Day 10: Vanishing Oatmeal Cookies. I can’t believe that I’ve never posted these cookies before. They’re the ones right under the flap of your oats!

When I want an oatmeal cookie but I don’t want to try a new recipe, I default to this one. It’s a family favorite and always comes out how you expect them to.

I made these pretty small, which is why they’re more ball shaped than normal. If you create larger cookie dough balls, the cookies will flatten out a bit more.

Vanishing Oatmeal Raisin Cookies

Ingredients

  • 1/2 Cup(s) (1 stick) plus 6 tablespoons butter, softened
  • 3/4 Cup(s) firmly packed brown sugar
  • 1/2 Cup(s) granulated sugar
  • 2 Eggs
  • 1 Teaspoon(s) vanilla
  • 1-1/2 Cup(s) all-purpose flour
  • 1 Teaspoon(s) Baking Soda
  • 1 Teaspoon(s) ground cinnamon
  • 1/2 Teaspoon(s) salt (optional)
  • 3 Cup(s) Quaker® Oats (quick or old fashioned, uncooked)
  • 1 Cup(s) raisins

Directions

  1. Heat oven to 350°F. In large bowl, beat butter and sugars on medium speed of electric mixer until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Add oats and raisins; mix well. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets. Bake 8 to 10 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.

Day 9: Chocolate Chip Confetti Cookies

Day 9: Chocolate Chip Funfetti Cookies. Yes, these are basically your normal chocolate chip cookies with a ton of brightly colored sprinkles all over. There’s nothing special about them, except for the fact that they’re pretty. Bakerella sure know how to make everything look good.

The taste, though? These cookies would probably be a 5 out of 10 for me. They’re not bad, they’re not great. They’re just… average. Straight in the middle of the scale average. Sorry, Bakerella. I found them to be a little stale tasting straight from the oven. How does that even happen?

If you’re looking for a chocolate chip cookie recipe, then I’d recommend my favorite chocolate chip cookies. I have yet to find a recipe that beats it.

Just roll your favorite chocolate chip cookie recipe into some sprinkles and you’ve got yourself a better cookie than this one.

Chocolate Chip Confetti Cookies

Ingredients

  • 2 3/4 cup all purpose flour
  • 3/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup unsalted butter, softened
  • 3/4 cup sugar
  • 1 cup packed light brown sugar
  • 2 teaspoons vanilla
  • 2 eggs
  • 3/4 cup walnuts, finely chopped
  • 2 cups semisweet chocolate chunks
  • 1/4 cup sprinkles, any kind
  • Confetti sprinkles

Directions

  1. Cream together the butter and both sugars. Mix in the eggs and vanilla.
  2. Stir in the flour, salt, and baking soda until just combined.
  3. Add in the walnuts, chocolate chips, and 1/4 cup of sprinkles. Cover the dough with saran wrap and freeze for 30 minutes.
  4. Preheat the oven to 350 degrees.
  5. Roll the dough into two inch balls and then top with confetti sprinkles on top. Bake two inches apart for 16-18 minutes.

Day 8: Chewy Oatmeal M&M Cookies

Day 8: Chewy Oatmeal M&M Cookies. Stock up on those mini M&M bags whenever you see them! I do. I used to find the bags consistently at Target, but now it’s hit or miss. Some Targets have them in stock, but once it sells out, it’s gone forever. I need to find the shipping schedule for mini M&M’s, stat.

I made these cookies mini-sized, just like the M&M’s. They didn’t flatten at all while baking, so I pushed them down with a spatula a little after they came out of the oven just to make them look more cookie-like.

These cookies would make a great “lunchbox” cookie. Put them in your child’s bag as a surprise when they leave for school. They’ll be so excited when they find this colorful goodie at lunch time!

Chewy Oatmeal M&M Cookies

Ingredients

  • 1/2 cup (1 stick) unsalted butter, softened to room temperature
  • 3/4 cup dark brown sugar
  • 1/2 cup sugar
  • 1 egg
  • 2 tsp vanilla
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1 and 2/3 cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 3/4 cup mini M&Ms

Directions

  1. Cream the softened butter and sugars until smooth. Add the egg and vanilla and mix well.
  2. Slowly stir in the baking soda, cinnamon, oats, and flour. Mix together until just combined. Do not overmix.
  3. Fold in the mini m&ms. Chill the dough for at least one hour in the fridge. Cookies will be very flat if the dough is not very cold.
  4. Preheat oven to 325F degrees. Roll and drop dough by tablespoonfuls onto ungreased baking sheet or silpat. Bake for 10-11 minutes and let cool on baking sheet for a minute or two before transferring to a wire rack.
