S’mores Fudge

I was recently featured on one of my favorite blogs, A Cup Of Jo, with these s’mores fudge! Thanks so much for the opportunity to guest post!

I would eat s’mores everything if I could. It’s the easiest dessert with the most satisfying result. Essentially, all you need are graham crackers, marshmallows, and chocolate. This recipe is wonderful because instead of adding regular milk chocolate, you’re adding fudge. Brilliant! It’s not as messy as the s’mores by the fireplace and it’s portable. You can pack them in tupperware and take them with you anywhere your heart desires.

The fudge is also the right consistency. It’s smooth, creamy, and has crunchy bites of graham crackers mixed in. Another thing that I love about this recipe is that there’s no thermometer required. It’s practically a no-fail recipe. You don’t have to wait for the mixture to reach a certain temperature– just keep a timer handy.

This recipe comes every so slightly adapted from The Novice Chef and makes about 16 pieces of fudge.

S’mores Fudge

Ingredients

  • 1 (7 ounce) jar marshmallow creme
  • 1 1/2 cups white sugar
  • 2/3 cup evaporated milk
  • 1/4 cup unsalted butter
  • pinch of salt
  • 2 cups milk chocolate chips
  • 1 cup semisweet chocolate chips
  • 1 1/2 teaspoon vanilla extract
  • 8 graham crackers, chopped (save a piece to crush over the top)
  • 1 1/2 cup mini marshmallows

Directions

  1. Line an 8x8 inch pan with foil or parchment paper and set aside.
  2. In a large saucepan over medium heat, mix together the marshmallow cream, sugar, evaporated milk, butter and salt. Bring to a full boil, and cook for 5 minutes, stirring constantly.
  3. Remove from heat and pour in semisweet chocolate chips and milk chocolate chips. Stir until chocolate is melted and mixture is smooth. Add in the vanilla.
  4. Gently fold in graham crackers and pour into prepared pan. Top with mini marshmallows and crushed graham cracker. Chill in refrigerator for 2 hours, or until firm.

Pillsbury Funfetti Chocolate Chip Scones and a Giveaway

We’ve got a birthday in the house… Funfetti is celebrating its 25th birthday this year and they’ve released a festive line to celebrate their special day!

There are four new frosting colors introduced: aqua blue, bold purple, hot pink, and vibrant green vanilla. Each come with their own unique sprinkles to accommodate the fun colors.

Opening a can, you immediately notice just how bright the color is. There’s nothing faint about it. The bright color would be great for celebrating kids’ birthdays.

One way of incorporating Funfetti into your daily routine is by making breakfast instead of dessert from the mix. You don’t have to eat dessert every day, but you do have to eat breakfast. Can you imagine waking up to these scones in the morning? I’d wish it was my birthday every day!

The Funfetti line will bring out the kid at heart in every adult. It’s a great reminder of how we should celebrate every birthday, regardless of age. A couple of easy ways to do that are:

  1. Add color! With bold and festive colors, your mood is instantly lifted.
  2. Embrace your birthday. Never be ashamed of how old you’re getting, but be proud for another year of goals accomplished.
  3. Say yes to dessert. There’s no such thing as people who don’t like dessert. They’ve just never tried the right sweets.

These scones came out perfect. My boyfriend preferred them without the frosting, but I’m all about the frosting and extra sprinkles on top. The extra crunchiness of chewing on sanding sugar is what I long for. As for the scone itself, it’s the moistest scone I’ve ever had. It’s not overwhelming sweet and can be eaten bare if desired.

I’ve used Pillsbury cake mixes and frostings for as long as I’ve lived, so this special birthday line doesn’t disappoint. The sprinkles always come out just as bold and colorful after being baked, which is an important trait when it comes to presentation.

Pillsbury Funfetti Chocolate Chip Scones

Ingredients

  • 1 1/4 cup Pillsbury Funfetti cake mix
  • 1 1/4 cup AP flour (plus some for dusting)
  • 1 stick of butter, cubed
  • 1 cup non fat milk
  • 1/4-1/2 cup chocolate chips, depending on your preference
  • 1 can of Pillsbury Bold Funfetti frosting

Directions

  1. Preheat oven to 400 degrees. Line a baking pan with parchment paper or silpat.
  2. In a mixing bowl, mix together the cake mix, flour, and cubed butter until crumbly.
  3. With the mixer on low, slowly pour in the milk until the dough comes together. Immediately turn off the mixer once it does. You don't want to over mix!
  4. Dust a small handful of flour over the dough, and with well floured hands, form the dough into a ball and remove it to the prepared baking sheet.
  5. Gently flatten the dough to about an 8" diameter and use a greased knife to cut the circle into 8 wedges. (If this is too much work, you can also just form your own shaped scones on the pan. That's what I did... way less time consuming!)
  6. Make sure you leave enough room between the wedges for them to rise and spread-- they puff up quite a bit.
  7. Bake for 20 minutes.
  8. Let completely cool and frost with Funfetti frosting.

Cornbread Chocolate Chip Cookies with Zulka Sugar

The lovely folks over at Zulka Pure Cane Sugar offered to send me a bag to try with my baking. Who am I to decline a bag of sugar? Upon opening the four pound bag, I could tell that this sugar was different. It was more coarse than normal white sugar and had that grainier texture that I love so much in sugar. Think of Sugar in the Raw granules cut in half and you’ve got yourself Zulka.

This isn’t just normal sugar. It’s “all natural products made directly from the sugar cane plant by using the latest technologies applied to proven century old processing concepts. These techniques result in products that have natural taste, color, and aroma derived directly from the Cane Plant.”

It’s some high quality sugar that made a difference in my baking. Just look at it.

The natural sugar taste makes it great for baking, stirring into coffee, and straight up eating from a spoon (guilty!).  I used Zulka to make cornbread chocolate chip cookies.

This was my first time experimenting with baking a box of corn muffin mix into something besides muffins, but it definitely won’t be my last. Even though these cookies turned out a little flat, the taste was spot on.

The corn muffin mix definitely gives these cookies the gritty and chewy taste that you get from eating a corn muffin, so be aware of that if you don’t like cornmeal. The Zulka sugar gave these cookies the perfect amount of sweetness. I’ll just have to play around with baking soda/baking powder and the flour ratio in order to get a thicker cookie.

Cornbread Chocolate Chip Cookies

Yield: 1 1/2 dozen cookies

Ingredients

  • 1/4 cup butter
  • 1/4 cup Zulka Pure Cane sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 box jiffy corn muffin mix
  • 3/4 cup chocolate chips

Directions

  1. Preheat oven to 350 degrees.
  2. In a mixing bowl, cream together the butter and sugar. Add in the egg and vanilla.
  3. Stir in the muffin mix until just combined. Mix in the chocolate chips. Refrigerate the dough for an hour.
  4. Drop into rounded tablespoons on a baking sheet and bake for 12-14 minutes.
