Bread is pretty amazing, not gonna lie. No matter what kind of bread it is, I love it. This cornbread was a bit too grainy for me, but it was still good. Just as long as they don’t have actual corn in it, I’m ok.
Banana Nut Bread
Talk about March madness. I’ve just been baking like crazy lately! Maybe it’s because of the amazing weather, the excitement of going to Japan in a week and a half, and the will to finish my third 25 pound bag of flour. I wake up in the morning and bake, I bake before I go to bed, and then all the rest of the time in between, I’m thinking about what to bake next. This morning, I made good ol’ classic banana bread and played with the ingredients. It came out pretty good, but I’d probably take out a banana next time. It came out very dense and I prefer light, fluffy breads. I got a few more subscriptions to my baking mailing list today and am super stoked! YES YES YES I DID IT! legit cinnamon rolls!
Okay, as most of you know, I’m not normally a fan of baking a bread that has to rise. Mostly because it takes so long and I don’t like dealing with yeast. I’ve tried two different cinnamon roll recipes before and have failed miserably, but I guess third time’s a charm. This recipe was seriously… amazing. I didn’t even use my kitchenaid mixer!! Can you believe it?! I kneaded this baby by hand. I’m not gonna lie though, I kinda cut down with the rising time simply because I don’t have the patience to just sit there for bread to rise. Who does that?
Freshly cut and placed into the pan to let them rise again for another 30 minutes.

And glazed. Finito! These made the apartment smell absolutely wonderful. 🙂 Next time, I’ll attempt making sticky buns.. basically, same dough recipe with a different glaze. Delish!
