For the 4th of July, I went down to Manhattan Beach with a couple of friends and spent the entire day there. I wanted to bring some baked goods for everyone to enjoy throughout the day and decided to bake Andes mint chocolate cookies. Everyone who had one enjoyed them, and these are always a hit among the mint chocolate lovers. I particularly like this recipe because the cookies are actually made of chocolate, rather than cocoa powder. They also remained soft for days, although they never last that long. 🙂 Hope everyone had a good 4th!
Blueberry Crumble Bars
Wow it’s been a while since I’ve posted. I’ve been so busy the past month with work/school/family/friends that I hardly have any time to bake. Terrible, I know. I finally managed to bake something last night, after my mom came back with butter from Costco. Everytime that I’ve tried to bake something before, the only thing that we have in our fridge is vegan butter & vegan supplies. I’ll stick to my nice and fatty baking, thank you very much. Anyways, these turned out quite delish. I’d definitely cut down the amount of sugar though because even for my sweet tooth, this was a little much. Let’s hope I have more time to bake some more this summer!

I was going to bake my dad’s favorite: everything cookies, but we didn’t have any walnuts handy. Bust! So brownies it was; who doesn’t love fun colored candies on top of brownies? As if there was such a thing as too much chocolate… These brownies ended up being EXTRA thick, probably 2 inches tall. After all, the best kind of brownies are the ones that with the soft gooey, center!
