A Valentine’s Giveaway from Tate’s Bake Shop

Hi friends!

The awesome crew over at Tate’s Bake Shop wanted to wish my readers a Happy Valentine’s Day by giving away a Valentine’s cookie cube and cookbook combo!:

Each cube contains approximately 6-7 cookies.”

I’m a huge fan myself of Tate’s Bake Shop. I’ve tried an assortment of their cookies and have made many recipes from Kathleen King’s cookbooks.

Tate's Bake Shop Linzer Heart Cookies

Yield: 20 sandwich cookies

Ingredients

    Cookies
  • 2 cups unbleached all-purpose flour
  • 1 cup cornstarch
  • ¼ teaspoon salt
  • ¾ pound (3 sticks) salted butter, at room temperature
  • 1 cup confectioners’ sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 2 cups toasted, skinned and very finely chopped hazelnuts
  • 6 ounces bittersweet chocolate, very finely chopped
  • -plus-
  • ½ cup seedless raspberry jam
  • ½ cup confectioners’ sugar for sifting

Directions

  1. Sift the flour, cornstarch, and salt into a medium bowl. In a large bowl, beat the butter and confectioners’ sugar with an electric mixer set on high speed until combined, about 1 minute. Beat in the egg and vanilla, scraping down the sides of the bowl as needed. With the mixer on low speed, mix in the flour mixture, just until combined. Mix in the hazelnuts and chocolate.
  2. Gather up the dough and shape it into a flat disk. Wrap in plastic wrap and refrigerate until chilled, at least 2 hours. (The dough can be refrigerated for up to 1 day. Let stand at room temperature for 10 minutes to soften slightly before rolling.)
  3. Line 2 large rimmed baking sheets with parchment paper or silicone baking mats. On a lightly floured work surface, roll out the dough to a round about ¼-inch thick. Use a 3 ½-inch heart-shaped cookie cutter to cut out the cookies as close as possible to avoid excess scraps. Arrange the hearts about 1 inch apart on the prepared baking sheets. Gather up the dough scraps and gently knead together, and cut out more cookies. If the dough becomes too soft to roll out, refrigerate until chilled. You should have 40 cookies. Refrigerate for 30 minutes to 1 hour.
  4. Position the oven racks in the top third and center of the oven and preheat the oven to 325°F.
  5. Use a 1-inch heart-shaped cookie cutter to cut out the centers of 20 cookies. These will be the cookie tops. (You can bake the mini hearts to nibble on later! Don’t throw away or re-roll.) Bake, switching the position of the baking sheets from top to bottom and front to back halfway through baking, until the cookies begin to brown, 20 to 25 minutes. Sift some of the ½ cup of confectioners’ sugar over the hot cut-out cookies Let cool completely on the baking sheets.
  6. Spread the jam on the cookie bottoms, leaving an 1/8-inch border around the edges. Add the tops, sugared sides up, and press together gently. Just before serving, sift the remaining confectioners’ sugar over the cookies.
  7. An important tip: be sure to chop the nuts and chocolate very fine in a food processor (pulse to chop so the friction doesn’t warm them), or the dough will be too rough-textured to roll out smoothly. You need a graduated set of heart-shaped cookie cutters to make these. Yield: 20 sandwich cookies

    Another lovely giveaway! Ever so generous! My plans for Valentine’s Day have become a surprise each year and I cannot wait to see what’s instore this year with my boyfriend! Maybe a nice outing of dinner and movie or staying in, but despite the plans, I’m just happy to spend time with my loved one. I’m hoping to bake plenty of goodies for the occasion. <3

    Staying in! The boyfriend is in the midst of tax season at work so we’re lucky when he’s home before 11pm every night. I’m planning on making cupcakes for two 🙂

    my honey and I will be staying in for VALENTINE’S DAY. CANDLES WILL BE LIT, WE WILL BE DRESSED UP FOR EACH OTHER, WINE WILL BE POURED AND DINNER WILL BE SERVED ON OUR BREAKFAST BAR. WE ARE COOKING BEEF STEW IN RED WINE SAUCE. FOR DESSERT–MINI CHOCOLATE LAVE CAKES. HEAVEN 🙂

    Unfortunately, i’ll be working on Valentine’s day. 7AM to 7pm, i’ll be the hospital caring for my patients. but it’s okay, i’ll celebrate it with my husband and baby the weekend before.

    The only plans that I have include receiving my organic veggie and fruit box and probably having dinner alone with my boys since daddy will be at work. Bah humbug! I will probably bake cookies with my little dudes and leading up to it I want to decorate the house in hearts we cut out from cardstock and let them decorate. 🙂

    And I ,actually have a Psychology midterm on valentine’s day, as depressing as that is…I’m hoping for lots of chocolates on sale the next day to use for baking though! hahaa

    Hi Kim!

    This year my valentines will be very different. We were blessed with our new little princess in December. Our tradition usually is that I will make dinner and dessert for the two of us. This year I’m thinking I’ll be ordering a heart shaped pizza from our local pizza place. I will still continue with our tradition and make a special dessert. Now I only have to decide which recipe from your blog to make. Any suggestions???

    Regardless, February 14th will be extra special as its Baby K’s first! Trust me, it will be full of love! I hope yours is as good as mine.

    Valentine’s day is my oldest son’s birthday. So, unfortunately, we don’t usually get to do anything romantic that day. our activities center around children’s birthday things. this year we’re going roller skating!

    for valentine’s day, I’m going to try to be a nice daughter 😉 and cook dinner for my parents. I’m thinking a blend of vietnamese – as a nod to my heritage and my mom’s amazinggg home cooking – and french cuisines – a combo that my family loves!!

    Valentine’s day isn’t just about myself and my husband, it definitely includes our boys 🙂 We love family time and that’s just how we will spend this valentine’s day. most likely we will stay in, eat lots of goodies and watch movies and play some games 🙂

    i live in la and my boyfriend lives in san diego, so i won’t see him on valentine’s day… but last year he ordered macarons for me to pick up from my favorite macaron store in la (paulette’s!! <3). i'm hoping for the same "surprise" this year 🙂

    My plans for Valentine’s day are to spoil my daughter with a valentine breakfast including heart shape pancakes and some strawberry milk. Then have lunch with her at school and attend her class party. Then we have a movie and dinner date!
