I’m home from vacation and it’s now back to regular programming. It was so nice to get away from everything with my DB and be able to eat whatever you want. That’s the best part about vacation…. food. You guys, you need to go visit Epcot in Disneyworld if you haven’t already. There is food galore and you step into different “countries” within a matter of blocks. It’s great! I’ll be having foodie guide posts for each park in Disneyworld soon. I just have to upload all of the pictures!

Here’s a simple dinner recipe that you can throw into the crockpot. I served it over plain white rice, but you can even shred it and throw it into wraps or sandwiches served with vegetables. Recipe slightly adapted from A Year of Cooking.

Honey Garlic Chicken Slow Cooker Recipe

Ingredients

  • 3-4 chicken breasts or a pound of thighs/tenderloins (mine were frozen)
  • 1 tablespoon minced garlic
  • 1 teaspoon dried basil
  • 1/2 cup soy sauce
  • 1/2 cup ketchup
  • 1/3 cup honey

Directions

  1. Place the chicken into your cooker.
  2. Mix together the rest of the ingredients and evenly pour it on top of the chicken.
  3. Cook on low for 6 hours or high for 3-4 (the time will be less if using a larger crockpot).

YUM! This looks so delicious with very little maintenance! I think I need to invest in a slow cooker and make some dinner for myself while I’m at work.

looks delicious! Too bad I don’t have a slow cooker but maybe I can mix up those ingredients as marinade. Love disney foods, when bored I love to check out websites which have complete menu descriptions on them, they are often quite inspiring 🙂 Can’t wait for your posts!

I made this for dinner yesterday and it was amazing! For the chicken breast, I swapped in about 8 boneless, skinless chicken thighs. My little brother said it tasted like ribs, which is a good thing.

Sounds awesome! But I work from 8-5 every day, what would you suggest doing to keep it cooking for 9 1/2 hours without drying up? Maybe add half a cup of water or?

made this today and made a few additions. Even though I used low sodium soy sauce still a little salty for our taste. I added a few pineapple chunks and 1 tablespoon of orange marmalade and it cut the salty taste. I also added a bag of frozen veggies (brochili, carrots and cauliflower) about about 2 hours before done and served over brown rice. It was delicious. my husband said he would eat this again. Thanks for the recipe. The smell was wonderful

Btw, this did really well baked, covered with tin foil, in a 350 degree oven for 1 hour.

I’m not sure what happened but mine turned out awful! I only cooked it on low for maybe 4 1/2-5 hours and it was black hockey pucks when I got home. Sounded promising tho :/
