The common cold has invaded our house and has knocked my DB and me off of our feet. He’s currently on day seven of being sick and I’m on day five. I always tell him when he gets sick that he can’t infect me because I’m immune. You’d think after working with kids for so long, you have a higher tolerance for bacteria. Turns out, I never get sick from the kiddos, only from my DB. Thanks, dear.
Day one was the worst. My lymph nodes were out of control for the next couple of days trying to fight it off. Now, we feel the worst in the morning and before bed. I pretty much cough the entire night with my deep, raspy, manly cough. I feel bad for my DB; I have no idea how he sleeps through it when I wake myself up from coughing so much. But then again, he’s the one that got me sick sooooo tough luck.
As for cooking while being sick, it’s the worst. I still do it, but I’d much rather skip it. I’m content with eating popcorn and a cup of soup for dinner, but my DB never loses his appetite, despite how sick he is. That means that popcorn and soup aren’t too appealing for him. Sick days for us = eating out quite a bit.
I’ll still eat popcorn whenever I get the chance to. I buy kernels and cook them in the microwave with thisĀ Popcorn Popper from NoricWare. It’s one of the greatest inventions ever. It’s a simple concept, but works wonderfully. I can cook the amount that I want to eat and don’t have to worry about popping kernels over the stovetop. The bowl itself is also the perfect size for mixing batter, serving popcorn, and storing cut fruits/vegetables cool in the refrigerator.
I bought mine from Target, but you can find it online if you don’t have a Target near you.
This is my first time making a sweet popcorn. I normally just add butter and salt to mine. You won’t believe how easy and quick it is to make some marshmallow caramel! It’s almost embarrassing.
I will note that the popcorn does lose it’s crunch rather quickly. I’m not sure how to fix that problem– any popcorn pros know?
Ingredients
- 1/4 cup brown sugar
- 1/4 cup butter
- 3 1/2 tablespoons unpopped popcorn kernels
- 1/4 cup Jet-Puffed Mallow Bits vanilla flavor
- 1 cup miniature marshmallows
Directions
- Cook the popcorn kernels using your preferred method and set aside. Make sure to remove any un-popped kernels.
- In a pan over low heat, melt together the brown sugar, butter, and miniature marshmallows (not the mallow bits!) until completely melted and mixed.
- Immediately pour the batter over your popped popcorn and stir until evenly coated.
- Mix in the mallow bits.
- Serve immediately!
