I can’t stop trying new cookie recipes. Some are a failure, some are a success, some are mehhh. I think this one falls in the category for mehhh category for me. They’re just too hard for my taste. But hey, if hard cookies are your thing then you’ll love them!
I do like how simple they are, though. I like the minimal ingredients and lack of flour. Flourless cookies always intrigue me.
We finally got our refrigerator delivered yesterday and I can happily say I’m back in the kitchen (wait.. did I mention that we bought our first home and moved? I’ll do a kitchen tour soon!)! We’re slowly getting settled into our new place, so that’s why I’ve been MIA recently. More recipes coming right at ya! This one’s from Sally’s Baking Addiction.
Ingredients
- 2/3 cup oats
- 1 teaspoon ground cinnamon
- 1 teaspoon baking soda
- 1 large egg
- 1 cup peanut butter
- 6 Tablespoons light brown sugar
- 1/2 cup chocolate chips
Directions
- In a large bowl, beat together the egg, peanut butter, and brown sugar.
- Gradually stir in the oats, cinnamon, baking soda.
- Fold in chocolate chips and chill the dough for 30 minutes.
- Preheat oven to 350F degrees.
- Drop by rounded spoonfuls onto baking sheet and slightly press down.
- Bake for 9 to 10 minutes.
