Just to let y’all know, I’m probably the worst dieter ever. Yup, I’m a complete failure and I have no shame in admitting it. I just can’t say no when someone offers me chocolate, kettle corn, or cupcakes! Granted, I went out of my way to get these babies because I’m only two days into my diet and I’m already having withdrawals. Whoops.
Nom nom nom.. The cotton candy didn’t taste much like cotton candy. It was just a vanilla cupcake with frosting that only slightly tasted like cotton candy when eaten alone, but it sure was the prettiest! My favorite was the dulce de leche, but I’m a sucker for caramel. I’ve always loved Crumbs cupcakes and prefer them over Sprinkles. I need to find some new cupcake spots to go to. Any suggestions?

Lol. I’m the same exact way with dieting! That cotton candy cupcake looks mouth watering.
I also made a 100 things list (except mine was cooking and baking combined. It actually ended up being 101 things because I couldn’t narrow it down. Here are a couple of the more unusual ones: chocolate babka (heard Martha Stewart’s recipe is the one to use), homemade danish, flan, sticky toffee pudding.

Ruby Red Grapefruit Cake
• Cook Time 45 min
• Level Easy
• Yield 8 to 10 servings
Ingredients
Cake:
• Nonstick baking spray
• 2 1/2 cups all-purpose flour
• 2 cups white sugar
• 1 teaspoon baking powder
• 1 1/2 teaspoons baking soda
• 1/2 teaspoon kosher salt
• 3 eggs
• 1 cup canola oil
• 1/2 cup freshly squeezed ruby red grapefruit juice
• 1/2 cup freshly squeezed Florida orange juice
• 1 banana, smashed
• 12 ounces sour cream
• 2 tablespoons orange zest
• 1 teaspoon grapefruit zest
• Glaze Sauce, recipe follows
Directions
Spray a large Bundt pan with nonstick baking spray. Preheat oven to 350 degrees F.
Sift together flour, sugar, baking powder, baking soda and salt. Then put mixture into a stand mixer add eggs, and mix until combined. Then add oil; mix until blended. Next add grapefruit and orange juices, and banana and mix until smooth and creamy. Lastly add sour cream and zests; just mix until combined and smooth.
Put cake batter into a 10-inch the prepared pan and bake for about 35 to 45 minutes or until a toothpick inserted in the center comes out clean.
When done turn pan onto serving platter let stand about 15 minutes then poke small holes in top. Pour Glaze Sauce on partially cooled cake. Let cool about 1 hour and serve.
Glaze Sauce:
• 1/4 cup grapefruit juice
• 2 cups confectioners’ sugar
• 1 tablespoon orange zest
• 1 tablespoon grapefruit zest
• 1/4 cup finely chopped pecans
Mix juice and sugar until combined. If it is too thick add more juice a tablespoon at a time. Stir in zest and pecans.

Those look really good! I am the same with with dieting. If I try to restrict myself, then I just cave way too fast. I found that trying to balance junky food with healthy food is the best way to go. It just makes it so the weight loss takes a bit longer.

I love cupcakes… I have visited A LOT of bakeries. I’m actually from Orange County, I don’t know if you want suggestions from down here. But I enjoy Susie Cakes, they have multiple locations. My all time favorite is from Frosted Cupcakary in Long beach, they just opened up a new bakery in Hollywood. If you want to venture into Orange County or Long Beach I know of a few places.

Outrageous upside down Dulce de Leche Brownies
12 brownies
1 stcik butter
3.5 oz chopped white chocolate
3.5 oz chopped milkchocolate
3 T cocoa
3 large eggs
1 cup sugar
1 t vanilla
1 cup flour
14 oz dulce de leche
Preheat the oven to 350 degrees (175 C).
Line a 8-inch (20 cm) square pan with a long sheet of aluminum foil that covers the bottom and reaches up the sides. If it doesn’t reach all the way up and over all four sides, cross another sheet of foil over it, making a large cross with edges that overhang the sides. Grease the bottom and sides of the foil with a bit of butter or non-stick spray.
Melt the butter in a medium saucepan. Add the chocolate pieces and stir constantly over very low heat until the chocolate is melted. Remove from heat and whisk in the cocoa powder until smooth. Add in the eggs one at a time, then stir in the sugar, vanilla, then the flour.
Scrape one third of the batter into the prepared pan.
Drop 1/3 of the Dulce de Leche, evenly spaced, over the brownie batter, then drag a knife through to swirl it slightly. Spread the remaining brownie batter over, then drop spoonfuls of the remaining Dulce de Leche in dollops over the top of the brownie batter. Use a knife to swirl the Dulce de Leche slightly.
Bake for 35 minutes. Remove from the oven and cool completely.
Storage:These brownies become way better the second day!
