Day 3: Chocolate Birthday Cake Cookies. Sprinkles aren’t just for birthdays, folks. Who says you can’t use them year round in your baking? And you totally should! How can you resist these star sprinkles?
Man, making a 12 days of cookies is a lot harder when you have a little one. I need to manage my time better. How do you moms (and dads) do it all? There just isn’t enough hours in a day.
While I figure out some more exciting things to write about, I’ll just leave you with the recipe for these chocolate cookies.

Ingredients
- 1 Stick (1/2 cup) Unsalted Butter, softened
- 1/2 cup White Sugar
- 1/2 cup Light Brown Sugar (packed)
- 1/4 cup Dark Brown Sugar (packed)
- 1 Large Egg + 1 Egg Yolk
- 2 teaspoons Pure Vanilla Extract
- 1 cup All Purpose Flour
- 1 and 1/2 cup Chocolate Cake Mix
- 2 tablespoons Instant Chocolate Pudding Mix
- 1 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 1/2 cup Rainbow Sprinkles
- 1 and 1/2 cup Semi Sweet Chocolate Chips
Directions
- Cream together the butter and both sugars. Add in egg, egg yolk, and vanilla extract.
- Gradually stir in the flour, cake mix, pudding mix, baking soda, and salt until just combined.
- Fold in sprinkles and chocolate chips. Cover and refrigerate dough for 2 hours.
- Preheat oven to 350 degrees. Line a baking sheet with Silpat.
- Scoop out dough balls onto baking sheet.
- Bake for 8 minutes.
