So a guy in my apartment building wanted to surprise his wife for her 30th birthday. She’s allergic to wheat and doesn’t like super sweet cakes. Besides that, I was free to do whatever I wanted. I ended up making a triple layer carrot cake with cream cheese frosting. I do love my carrot cake.. and I have the absolute best recipe for it from my aunt! I wrote “Happy birthday” on it after I took the picture, but my writing definitely still needs some practicing. All in all, they were really happy with the cake and their friends devoured it. That’s all that matters! I think I should’ve done a border on the bottom of the cake though.. oh well. You learn something new with every cake you bake.

Hi! I found you on LJ and made this cake for Easter dinner. It was a huge hit!! Everyone kept commenting on how good it was. My dad took half of it home with him and told me he ate the whole thing a few hours later. 🙂
