I apologize in advance to anyone out there currently on a diet or trying to lose those ten pounds. Look away while you still can! Hmm.. I probably should have written that before the pictures. I guess we’re all doomed. My bad.

My DB started his first day of law school today! I’m so proud of him. I’ve had the pleasure of meeting a few of his classmates and can honestly say that he couldn’t be surrounded by a better group of people (not to mention that I’ve found my guinea pigs to eat all the stuff I bake :). Hey, who said cookies don’t make friends? The way to anyone’s heart is through the stomach; that’s just common sense.

I baked these bars back when I was on a cake batter kick with the cake batter cookies and cake batter rice crispy treats. These were, hands down, the best out of the three. It was like having cake batter melt in your mouth. Is that even possible? Cause it is now. Slightly adapted from Fake Ginger.

Cake Batter Bars

Ingredients

  • 1 1/4 cup funfetti cake mix
  • 3/4 cup AP flour
  • 1/4 teaspoon baking soda
  • 3/4 cup butter, melted and slightly cooled
  • 1 egg
  • 1 egg yolk
  • 2 teaspoons vanilla
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 5 heaping tablespoons sprinkles of your choice (I used stars)

Directions

  1. Preheat oven to 350F. Grease an 8 x 8 inch pan.
  2. Cream both sugars, butter, vanilla, egg, and egg yolk.
  3. Gradually mix in flour, cake mix, and baking soda until just mixed. Stir in sprinkles.
  4. Spread batter evenly into greased pan.
  5. Bake for 30-35 minutes until top is lightly browned and middle still jiggles slightly. Cool completely before cutting.

    @erin: i found them at HomeGoods, believe it or not! They have some great finds there! you can also find them at marshalls, TJMaxx or ross!

    I keep stumbling on these in awe and I think I will make them tomorrow before I go to work. I don’t have any sprinkles though, they might not be as fun as yours!

    I tried making these yesterday- and they turned out cakey- as in mostly cake-like. They looked nothing like yours. I kept reviewing the recipe and couldn’t figure out what I did wrong. Suggestions?

    @madison: yes, make sure that they are underbaked. i’m guessing that you cooked them all the way through rather than letting it be a big jiggly in the middle. reduce the cooking time for your oven since it seems as if it’s faster than mine. hope that helps!

    Ok- maybe this was it- the store was out of Funfetti Mix (I know! Crazy!) So I used either the Duncan Heins or Betty version. Do you think that had something to do with it? I was going to try them again tonight, but I only have the other kind of cake mix!

    i have these in the oven now, if they turn out i’ll be taking them to thanksgiving tomorrow, i tasted the batter and it was good but really really really sweet, i hope baking it cuts down on that a bit, i used the betty crocker brand as well bc i like it better than pillsbury bc theirs has big sprinkles, i’ll let everyone know how they turn out!

    My boyfriend and I just made these.. wow! He went a little crazy on the sprinkles, but who could blame him? These turned out great, and yes they are super sweet! The center is gooey but it has such a nice, flaky top. My only problem was that it sunk a lot after pulling it out of the oven, but that always happens to me with blondie-type recipes and the big corners taste great in this recipe so I don’t mind. Thanks for this one!

    Found this recipe via Pinterest and I must say, I was disappointed. I followed the recipe exactly as written. I let them cool while we ate dinner after I pulled them out of the oven. 20 minutes later I couldn’t even cut it without it falling apart. Then I put it back in the over for another 10 minutes and the only thing that did was make the top crust hard and the inside was still gooey. I put them in the refrigerator and I will see how they taste today but I ended up with a stomach ache last night – and I’ve eaten raw dough many times with no problems! This was entirely a let down. I thought you were supposed to follow baking directions exactly to avoid problems but I can’t think of anything I should have done differently.

    Made a double batch but cooked 1/2 in the 8×8 and had to leave in the oven for about 40 minutes or more…very good. Less sweet than the batter πŸ™‚

    Mine were good but 3/4 cup of butter is a lot. I think I mis measured. Mine were almost greasy! Yikes!

    Mine turned out amazing!! And I used the other half of the funfetti mix to make a dozen cupcakes! Half the bars are already gone πŸ™‚ thanks for the recipe!

    Made this tonight and they were SOOOOOO good. Husband & Kids loved them! At first I thought I was doing something wrong because the batter was really thick but they turned out amazing! Thank you! : )

    I made these and they were yummy! Anyone having trouble with them coming out too cakey- I used baking powder instead of baking soda and the came our perfect.
