I apologize in advance to anyone out there currently on a diet or trying to lose those ten pounds. Look away while you still can! Hmm.. I probably should have written that before the pictures. I guess we’re all doomed. My bad.
My DB started his first day of law school today! I’m so proud of him. I’ve had the pleasure of meeting a few of his classmates and can honestly say that he couldn’t be surrounded by a better group of people (not to mention that I’ve found my guinea pigs to eat all the stuff I bake :). Hey, who said cookies don’t make friends? The way to anyone’s heart is through the stomach; that’s just common sense.
I baked these bars back when I was on a cake batter kick with the cake batter cookies and cake batter rice crispy treats. These were, hands down, the best out of the three. It was like having cake batter melt in your mouth. Is that even possible? Cause it is now. Slightly adapted from Fake Ginger.
Ingredients
- 1 1/4 cup funfetti cake mix
- 3/4 cup AP flour
- 1/4 teaspoon baking soda
- 3/4 cup butter, melted and slightly cooled
- 1 egg
- 1 egg yolk
- 2 teaspoons vanilla
- 1/2 cup sugar
- 1/2 cup brown sugar
- 5 heaping tablespoons sprinkles of your choice (I used stars)
Directions
- Preheat oven to 350F. Grease an 8 x 8 inch pan.
- Cream both sugars, butter, vanilla, egg, and egg yolk.
- Gradually mix in flour, cake mix, and baking soda until just mixed. Stir in sprinkles.
- Spread batter evenly into greased pan.
- Bake for 30-35 minutes until top is lightly browned and middle still jiggles slightly. Cool completely before cutting.
WOW! just stumbled across your blog and I am loving it. I cannot wait to try out these bars. I believe I will be making them tomorrow!! Now following!!
Just forget about the diet…chomp these bars first and think about them later π
My diet is eating what I want π
Where did you find those awesome star shaped sprinkles? P.S. Adding this to my post compiling a list of funfetti/cake batter recipes!
@erin: i found them at HomeGoods, believe it or not! They have some great finds there! you can also find them at marshalls, TJMaxx or ross!
I keep stumbling on these in awe and I think I will make them tomorrow before I go to work. I don’t have any sprinkles though, they might not be as fun as yours!
these look terrific, however if you are looking for less fat – give my version a try – it’s really good.

I tried making these yesterday- and they turned out cakey- as in mostly cake-like. They looked nothing like yours. I kept reviewing the recipe and couldn’t figure out what I did wrong. Suggestions?
@madison: yes, make sure that they are underbaked. i’m guessing that you cooked them all the way through rather than letting it be a big jiggly in the middle. reduce the cooking time for your oven since it seems as if it’s faster than mine. hope that helps!
Ok- maybe this was it- the store was out of Funfetti Mix (I know! Crazy!) So I used either the Duncan Heins or Betty version. Do you think that had something to do with it? I was going to try them again tonight, but I only have the other kind of cake mix!
Ok I just made these and they are definately jiggly in the middle. The batter tasted sooo good hoping they turn out as good as yours!!!
I made these yesterday and they were amazing! Thanks for the great recipe! http://3flygirlz.blogspot.com/
Found on Pinterest. Have these in the oven baking now. I’ll tell ya what…. If they taste like the batter did, they are going to be absolutely amazing!!! Thank you so much!! π
These were AWESOME! they lasted under 48 hrs in my house! Defiantly been sharing this recipe for others to try!
Made these and they came out amazing. So easy, too.
making these now for a friend recovering from a chemo treatment. came across them on pinterest. they look wonderful. thanks.
I am very new to baking – what is AP flour? Thanks in advance! Can’t wait to make these!
I’m trying this recipe out right now! I can’t wait to stuff my face! =)
K.C. AP is all purpose… just normal flour π
i have these in the oven now, if they turn out i’ll be taking them to thanksgiving tomorrow, i tasted the batter and it was good but really really really sweet, i hope baking it cuts down on that a bit, i used the betty crocker brand as well bc i like it better than pillsbury bc theirs has big sprinkles, i’ll let everyone know how they turn out!
made these and they don’t even look like your’s, cake like and dry – I took them out at 28min…guess the time needs to be adjusted. bummed
My boyfriend and I just made these.. wow! He went a little crazy on the sprinkles, but who could blame him? These turned out great, and yes they are super sweet! The center is gooey but it has such a nice, flaky top. My only problem was that it sunk a lot after pulling it out of the oven, but that always happens to me with blondie-type recipes and the big corners taste great in this recipe so I don’t mind. Thanks for this one!
Has anyone tried making a double batch? Or could you do 1 1/2 times everything and make it in a 9×13? Any suggestions?
these look amazing and definitely warrant the effort behind two-a-day workouts.
Found this recipe via Pinterest and I must say, I was disappointed. I followed the recipe exactly as written. I let them cool while we ate dinner after I pulled them out of the oven. 20 minutes later I couldn’t even cut it without it falling apart. Then I put it back in the over for another 10 minutes and the only thing that did was make the top crust hard and the inside was still gooey. I put them in the refrigerator and I will see how they taste today but I ended up with a stomach ache last night – and I’ve eaten raw dough many times with no problems! This was entirely a let down. I thought you were supposed to follow baking directions exactly to avoid problems but I can’t think of anything I should have done differently.
Made a double batch but cooked 1/2 in the 8×8 and had to leave in the oven for about 40 minutes or more…very good. Less sweet than the batter π
These are in the oven right now, I’m so excited to try them! The batter was delish. π
tried these and the are amazing the kids love them! I also made them with macadamia nuts and coconut for the adults, big hit!
just dumped the whole box of funfetti in my first attempt… we’ll see how they turn out :/
Mine were good but 3/4 cup of butter is a lot. I think I mis measured. Mine were almost greasy! Yikes!
Mine turned out amazing!! And I used the other half of the funfetti mix to make a dozen cupcakes! Half the bars are already gone π thanks for the recipe!
These are my “new favorite treat” to bake! Both times, they came out delicious! My husband is addicted…I’m actually going to make some more tonight to surprise him! Thanks for the recipe. I also took mine out at 25 minutes since my oven is brand new.
Love cake batter can’t wait to try these π
I have some cake batter left over from another recipes so this well be perfect! Thanks!
Made this tonight and they were SOOOOOO good. Husband & Kids loved them! At first I thought I was doing something wrong because the batter was really thick but they turned out amazing! Thank you! : )
I only have the Pillsbury Funfetti cookie mix in the house- would that work the same??
These are delish! And so easy too. Thanks so much for posting the recipe.
Made these twice, according to the recipe and they totally caved in the middle both times!
Mine are caving too! And it looks like they won’t be as thin :/
Followed the recipe exactly…hmmmm
I made these and they were yummy! Anyone having trouble with them coming out too cakey- I used baking powder instead of baking soda and the came our perfect.
